  • Chop unpeeled apricots finely. Measure exactly 4 cups prepared apricots into large saucepan. Add lemon juice. Combine 1/4 cup sugar and pectin crystals. Gradually add to fruit mixture, stirring after each addition until well blended. Let stand 30 min., stirring occasionally.
  • Add remaining sugar; stir 3 min. or until most the sugar is dissolved and no longer grainy. (A few sugar crystals may remain.)
  • Fill all containers immediately to within 1/2 inch of tops. Wipe off top edges of containers; immediately cover with lids. Let stand at room temperature 24 hours or until set.

This recipe will yield 5 (1-cup/250-mL) containers of jam plus a partially filled container. Refrigerate the partially filled container immediately and use within 3 weeks.
