  • Mix cracker crumbs, Parmesan cheese and basil on plate. Rinse chicken with cold water; gently shake off excess water. Dip chicken in crumb mixture, turning over to evenly coat both sides of each chicken breast; set aside.
  • Heat oil in large nonstick skillet on medium heat. Add chicken; cook 6 to 7 min. on each side or until golden brown on both sides and cooked through (170°F).
  • Serve with the vegetables and stuffing.


Substitute 3 cups of your favourite frozen vegetable blend, cooked and drained, for the cut-up fresh vegetables.

    I made this recipe once following the directions exactly the first time alot of the crumbs fell off the 2nd time i mixed together 2 eggs salt & pepper dipped the chicken in the egg mixture then the crumbs. Then fried in 2 tbs oil on med high heat for 2-3 min until golden then baked turned out tender and juicy on the inside and crispy on the outside MUCH BETTER
