Very good. I would definitely add a tsp of cinnamon though and a little more carrots for moisture or a little less cooking time. Great healthy treat though.
These were tasty. I used currants instead and added a touch of cinnamon since my daughter likes those ingredients. I'd make them again. I suggest using even more grated carrots, not only for their nutritional value but they keep the muffins moist.
Very good. Next time I make them I think that I will add a little cinnamon. Would also be excellent with chocolate chips substituted for the raisins.
