  • GREASE 12 large muffin tins or line with paper baking cups.
  • POUR buttermilk over oats in large bowl; stir to mix. Let stand 5 minutes. Stir in carrots, butter, brown sugar, eggs and orange rind.
  • MIX remaining ingredients in bowl; stir into oat mixture just until moistened. Spoon into muffin cups, filling each to the top.
  • BAKE at 400°F (200°C) for about 20 minutes or until firm to the touch. Cool in pan 5 minutes; remove muffins and cool on rack. Store in airtight container.

    Very good. I would definitely add a tsp of cinnamon though and a little more carrots for moisture or a little less cooking time. Great healthy treat though.

    These were tasty. I used currants instead and added a touch of cinnamon since my daughter likes those ingredients. I'd make them again. I suggest using even more grated carrots, not only for their nutritional value but they keep the muffins moist.

    Very good. Next time I make them I think that I will add a little cinnamon. Would also be excellent with chocolate chips substituted for the raisins.
