Chop 1 apple finely. Prepare pancake batter as directed. Use to cook pancakes as directed, immediately sprinkling about 1 Tbsp. apples over batter for each pancake before cooking as directed.
Before preparing the pancake batter, place baking sheet or ovenproof platter in 200ºF oven to warm. Cook pancakes as directed; place on warmed baking sheet. Cover, then return to oven to keep warm until all pancakes are cooked and ready to be served.
Prepare recipe as directed; top with fresh blueberries or raspberries.
