  • Heat oven to 400ºF.
  • Combine rice, onions, water and 1/2 cup chili sauce in 1.5-L casserole dish sprayed with cooking spray.
  • Mix lemon zest, cumin and remaining chili sauce in pie plate. Place bread crumbs in separate pie plate. Dip chicken, 1 breast at a time, into chili sauce mixture then into bread crumbs, turning to evenly coat both sides of each breast with each ingredient; place in single layer over rice mixture.
  • Bake 30 min. or until chicken is done (165ºF) and rice is tender.

Variation

Prepare using lime zest, and substituting chili powder for the cumin.

Serve with a tossed green salad.
