Sweet potatoes are not very moist.
Simple to make, really quick to just pop into the oven. I used boneless chicken breast as that is what I had available, but could make it with any part of the chicken.
This recipe is awesome! I was able to feed 4 - 6 people easily! The only words of advice I have are to cut up the sweet potatoes a little bit smaller. They are great pairing with the chicken and give it a to die for flavour!
