  • Heat oven to 375°F.
  • Toss vegetables with dressing and 1/2 tsp. thyme. Spread onto bottom of 15x10x3/4-inch pan sprayed with cooking spray. Bake 10 min. Meanwhile, combine stuffing mix and water. Cut each tenderloin diagonally into thirds.
  • Move vegetable mixture to outside edges of pan. Spoon stuffing down centre of pan; top with meat and remaining thyme.
  • Bake 45 to 50 min. or until meat is done (160°F).

For Softer Sweet Potatoes

Roasted sweet potatoes have a firm texture. If you prefer a softer texture, micrwoave the potato mixture in microwaveable bowl on HIGH 3 min. before transferring to baking pan.

    I've made this several times. only once with the stuffing because it came out mushy. The sweet potatoes are fabulous and I have never had problems with the pork either.
