  • Heat oil in large nonstick skillet on medium-high heat. Add chicken; cook 5 min. or until lightly browned, stirring occasionally. Add peppers, red onions and garlic; cook and stir 3 min. Spoon onto plate.
  • Add water, pasta, salsa and seasoning mix to skillet; stir. Bring to boil; cover. Simmer on medium-low heat 10 min., stirring after 5 min. Return chicken mixture to skillet; stir. Cook, uncovered, 2 to 4 min. or until pasta is cooked to desired tenderness and most the liquid is cooked off, stirring occasionally. Remove from heat.
  • Add half the cheese; stir until melted. Sprinkle with green onions, cilantro and remaining cheese.

Special Extra

Serve topped with sour cream and chopped fresh tomatoes.


Substitute grilling steak or flank steak for the chicken.
