  • COOK macaroni in a large pot of boiling water for 8 minutes. Add carrots and zucchini and continue cooking for about 3 more minutes, or until pasta and vegetables are cooked. Drain and set aside.
  • IN same saucepan, whisk together milk, flour and mustard; cook over medium heat, whisking until thick and smooth. Reduce heat and cook 2 minutes longer.
  • STIR in macaroni, vegetables and cheese. Heat until cheese melts. Season with salt and pepper.

    I varied the recipe to an old fashioned (but healthy) mac & cheese by using 2 cups water and macaroni, 1 cup 1% milk,and 1 tbsp. margarine. After the macaroni is tender I add the cheese (2 cups light cracker barrel cheddar, and 1/4 cup parmesan cheese). My family loves it !
