  • Heat dressing in large saucepan on medium heat. Add onions and peppers; cook 5 min., stirring frequently. Add chicken, broth and water; stir. Bring to boil; cover. Simmer on medium-low heat 10 min., stirring occasionally.
  • Stir in potatoes; simmer 5 min. Add quinoa; stir. Simmer 10 min. or until quinoa is tender, stirring in frozen mixed vegetables after 5 min.
  • Remove from heat. Stir in cheese.

Special Extra

Add 1/2 cup chopped fresh parsley to stew along with the frozen mixed vegetables.

Make Ahead

This satisfying stew can be prepared ahead of time. Cool, then refrigerate up to 24 hours. This allows the flavours to combine and become richer. If you find the mixture too thick, add a little extra water or broth to the stew before reheating.
