  • Peel oranges, then hold over small bowl while cutting each orange into sections, reserving juice in bowl. Set orange sections aside.
  • Add mayonnaise and pepper to reserved orange juice; mix well.
  • Combine fennel, mint and orange sections in medium bowl. Add mayonnaise mixture; mix lightly.
  • Refrigerate 1 hour.

How to Section the Oranges

To remove citrus sections, cut a 1/2-inch-thick slice off both the top and bottom ends of the fruit. Stand the fruit on end and cut the peel and white pith away from the fruit, using a downward cutting motion following the shape of the fruit. Place the peeled fruit on its side, then cut down along the membrane on both sides of each section to remove the fruit.

Substitute

Substitute 1 drained can (10 fl oz/284 mL) mandarin oranges for the fresh navel orange sections.

Special Extra

Add 1/4 cup toasted slivered almonds to the salad just before serving.
