  • Cook first 4 ingredients in small saucepan on medium-high heat 13 to 15 min. or until thickened to syrup-like consistency, stirring frequently.
  • Meanwhile, use sharp knife to make 1/4-inch-deep parallel cuts, about 3/4 inch apart, in top surface of each breast. Make additional scores at right angles to form diamond shapes.
  • Heat large skillet on medium heat. Add duck, skin-sides down; cook 9 min. or until skin is crisp and golden brown. Turn over; cook 5 min. or until done (170°F).
  • Transfer duck to cutting board; let stand 5 min. Slice duck; serve with blueberry sauce.

Best of Season

When fresh blueberries are in season, prepare sauce using 1-1/2 cups fresh blueberries.

Pan-Seared Duck with Citrus Sauce

Omit blueberry sauce. Cook 3/4 cup orange juice, 1/2 cup orange marmalade, 2 Tbsp. orange liqueur and 1/2 tsp. of grated gingerroot in small saucepan on medium-high heat until thickened, stirring frequently. Serve over duck.
