  • COMBINE cream and eggs in medium saucepan. Cook and stir over medium heat until thick (do not boil). Stir in cheese.
  • SPLIT squash in half and remove seeds. Place cut side down in microwaveable dish with a little water. Microwave on HIGH power for 10 to 12 minutes or until tender. Let stand.
  • SCOOP out squash onto serving plate. Top with broccoli and sauce. Garnish with chopped bacon, parsley and additional cheese.

    This is a meal you can modify any way you like. Try fried musrooms and chicken, fantastic!

    A definate keeper! I added 6 cloves garlic and fresh basil and parsley to sauted mushrooms, red pepper, green pepper and onions. Then toss in the bacon and parm cheese...what a delight! My family didn't even realize that they were eating squash!!!
