Here's a fresh take on French fried potatoes! These oven-baked veggie fries are made with carrots and parsnips, and are seasoned with Tuscan dressing, garlic, thyme and Parmesan. Now that's a veggie side dish with a tasty twist!

  • Heat oven to 400ºF.
  • Cut vegetables into matchlike sticks; place in large bowl.
  • Add dressing, garlic and thyme; toss to coat. Spread onto baking sheet sprayed with cooking spray.
  • Bake 20 min. or until crisp-tender, stirring after 10 min. Sprinkle with cheese.

Special Extra

Mix 1/4 cup Miracle Whip Calorie-Wise Dressing and 2 tsp. prepared horseradish. Serve with the "frites."

    This was delicious. I am personally not a huge fan of french fries but I love eating vegetables, parsnips being one of my favorites. I only used parsnips this time, but I imagine the carrots are great too. I didn't use dressing, just plain olive oil and added some sea salt. After the full 20 minutes, I put on the parmesan cheese per the recipe but put in the oven for a few extra minutes. Yum!
