  • Cook quinoa as directed on package; cool slightly. Meanwhile, mix sour cream with lemon juice, 1/2 tsp. lemon zest, 1/4 cup mayonnaise and 1 Tbsp. mint until blended. Refrigerate until ready to serve.
  • Whisk egg in medium bowl until blended. Add quinoa, bread crumbs, cheese, peas, onions, remaining mayonnaise and remaining lemon zest; mix well.
  • Shape into 12 (2-inch) patties, using about 2 Tbsp. quinoa mixture for each patty; place in single layer on baking sheet. Freeze 30 min.
  • Heat oil in large nonstick skillet on medium heat 2 min. Add half the quinoa patties; cook 4 to 5 min. on each side or until golden brown on both sides. Repeat with remaining quinoa patties.
  • Serve fritters with mayonnaise mixture.

Substitute

Substitute fresh basil leaves for the mint leaves.

Special Extra

Cover serving platter with arugula before topping with the cooked fritters.
