Choose round, plump peaches that give slightly to gentle pressure. Peaches should have smooth, unwrinkled skins and a sweet aroma. Avoid very hard fruit which will never ripen to full flavor. Store ripe peaches, loosely packed in a plastic bag, in the refrigerator for up to 5 days.
Look for firm, plump berries that are full coloured for their variety. Fresh berries are perishable and do not ripen after picking, so store in the refrigerator for no longer than 2 days. Rinse with cool water just before using and remove the hulls, if necessary. Berries in season have more flavour and are typically lower in cost than their out-of-season counterparts. Enjoy summer's best all year long by freezing berries at the height of their season. Then, thaw and use as desired.
Wash and prepare each batch of fresh fruit as you need it. The quality of fruit deteriorates rapidly once washed and prepared, even if refrigerated.
