  • DRAIN peaches well; reserving 2 Tbsp (30mL) juice.
  • ARRANGE halves, cut side down, in shallow 8-inch (2L/20cm) baking dish.
  • STIR together sugar and corn starch and sprinkle over top.
  • STIR together lemon juice and reserved juice from peaches; pour over top.
  • TOPPING:
  • STIR together flour, sugar, baking powder, salt and cinnamon.
  • CUT in butter until mixture resembles coarse oatmeal.
  • STIR enough milk into flour mixture to make soft dough, stirring only until just blended.
  • SPOON topping into 8 rough dollops no thicker than 1/2-inch.
  • ARRANGE over fruit, overlapping slightly if necessary.
  • BAKE at 375°F (190°C) for 35 to 45 minutes or until topping is browned and fruit juices bubble thickly up around it.
  • SERVE warm with cream or yogurt.
