  • Preheat oven to 375ºF. Beat eggs, bananas and milk in large bowl with wire whisk until well blended. Add sugar and peanut butter; mix well. (Mixture will be slightly lumpy.) Add flour and baking powder; stir just until moistened.
  • Spoon evenly into 12 paper-lined muffin cups. Drop 1 tsp. jam over batter in centre of each cup; press gently into batter with back of spoon until jam is completely covered by batter.
  • Bake 15 min. or until lightly browned. Transfer to wire racks; cool completely.

Special Extra

Garnish muffins with banana slices just before serving, "glueing" them to the tops of the muffins with a small amount of additional peanut butter, if desired.
