MIX cream cheese and sugar with mixer until smooth. Add eggs, one at a time and mix until just blended. Combine coffee and water; stir into cheese mixture.
POUR into crumb crust.
BAKE at 350°F for 30 minutes or until centre is almost set. Cool to room temperature. Refrigerate 3 hours or overnight. Garnish with chocolate dipped almonds, if desired.
For springform pan recipe, increase coffee to 1 1/2 Tbsp.
