This refreshing dip can be refrigerated up to 2 days before serving. Top with reserved coconut just before serving as directed in recipe.
To create a crispy texture and complex flavour, toast coconut before using. MICROWAVE METHOD: Spread coconut in microwaveable pie plate; microwave on HIGH 3 min. or until lightly browned, stirring every minute. OVEN METHOD: Spread coconut evenly in shallow baking pan. Bake at 350°F for 7 to 10 min. or until lightly browned, stirring frequently. Watch carefully as coconut can burn easily!
