Our JELL-O poke cakes are long-time favourites, so we decided to make a version using cupcakes!  Pair up a boxed cake mix and your favourite JELL-O Jelly Powder and turn them into our beloved Poke Cupcakes - your family will thank you.

  • Prepare cake batter and bake as directed on package for 24 cupcakes. Cool in pans 10 min. Pierce tops with fork.
  • Add boiling water to jelly powder in small bowl; stir 2 min. until completely dissolved. Spoon over cupcakes. Refrigerate 30 min.
  • Remove cupcakes from pans. Tint Cool Whip with food colouring; spread over cupcakes. Decorate as desired.

How to Easily Poke Holes in Cupcakes

Use a meat fork to make the holes in the cupcakes to fill with the dissolved jelly powder.

Variation

Omit food colouring.
