  • Heat oven to 375ºF.
  • Combine vinaigrette, cheese and thyme. Reserve 1/3 cup vinaigrette mixture for later use. Toss remaining vinaigrette mixture with pears, onions and garlic.
  • Place meat in roasting pan sprayed with cooking spray; brush with reserved vinaigrette mixture. Spoon pear mixture around meat.
  • Bake 1-1/4 hours to 1-1/2 hours or until meat is done (160ºF). Remove from oven. Let stand 10 min.
  • Slice meat. Serve with roasted pear mixture.

Special Extra

Garnish with additional fresh thyme sprigs before serving.

Substitute

Substitute your favourite variety of cooking apple, such as Granny Smith, for the pears.
