  • Heat greased barbecue to medium-high heat.
  • Place eggplant, pepper and mushroom, top side up, on barbecue grate. Grill 3 to 5 min. on each side or until tender, topping mushroom with cheese and adding bun, cut sides down, to barbecue for the last minute.
  • Spread cut sides of bun with dressing. Fill bun with eggplant, pepper, mushroom, tomato and arugula.
