  • Use large holes of box grater to shred potatoes and onion; squeeze shredded vegetables to remove excess liquid.
  • Whisk eggs in large bowl until blended. Add cream cheese product and Parmesan; mix well. Stir in flour. Add vegetables and bread crumbs; mix well.
  • Heat oil in large skillet on medium heat. Drop 1/3 of the vegetable mixture into 6 mounds in skillet, using about 1/3 cup vegetable mixture for each mound; flatten slightly with back of spatula. Cook 2 to 3 min. on each side or until fritters are golden brown on both sides. Transfer fritters to paper towel-covered plate. Repeat with remaining vegetable mixture.


It is important to squeeze out as much water from the shredded vegetables as possible. Too much moisture will prevent the fritters from holding their shapes. Use cheesecloth or a clean kitchen towel to squeeze as much liquid from the shredded vegetables as possible before using as directed.


Substitute 2 shallots for the onion.

Serving Suggestion

Garnish fritters with chopped fresh parsley. Serve with sour cream.
