It is important to squeeze out as much water from the shredded vegetables as possible. Too much moisture will prevent the fritters from holding their shapes. Use cheesecloth or a clean kitchen towel to squeeze as much liquid from the shredded vegetables as possible before using as directed.
Substitute 2 shallots for the onion.
Garnish fritters with chopped fresh parsley. Serve with sour cream.
