Found I had to actually cook the rice. Recipe as is leaves crunchy rice.
I liked this recipe. It was very quick and easy to put together. However I found it a little bland so I added about 1/2 cup of medium salsa and some corn at the end to add some flavour and color. Plus extra veggies are always good!
I've made this recipe twice (without the cheese). It is a nice hearty meal. The second time I made it, I added half of a japaleno pepper to spice it up. I think I might add a whole one next time.
