  • Heat oven to 375ºF.
  • Combine first 6 ingredients in large bowl.
  • Whisk together eggs, pumpkin, Miracle Whip, oil and vanilla in separate bowl until blended. Add to flour mixture apples and walnuts; stir just until moistened (batter will be lumpy).
  • Spoon batter into 12 muffin pan cups lined with muffin liners.
  • Bake 22 to 25 min. or until toothpick inserted in centres comes out clean. Cool in pan 5 min; remove from pan to serve.

How to Make Pumpkin Spice

For each 1 tsp. of pumpkin pie spice needed, mix 1/2 tsp. ground cinnamon, 1/4 tsp. ground ginger, 1/8 tsp. ground allspice and 1/8 tsp. ground nutmeg.
