  • Heat oil in large saucepan on medium-high heat. Add onions; cook 3 min. or until softened, stirring frequently. Add garlic; cook and stir 1 min. Add rice and chicken broth; stir. Bring to boil; cover. Simmer on medium-low heat 15 min. or until rice is tender.
  • Add spinach and peas; cook and stir 2 min. or until heated through. Remove from heat.
  • Stir in half the cheese. Top with lemon zest, mint and remaining cheese.

Serving Suggestion

Serve with roasted salmon.


Substitute small fresh broccoli florets for the peas.
