  • Cook and stir onion and garlic in 1 Tbsp. oil on medium heat until tender. Add pork; cook and stir on high heat for 5 minutes or until golden brown on all sides.
  • Add 1/2 cup water and the remaining ingredients; bring to a boil. Cover; reduce heat and simmer for 10 minutes or until pork is cooked through.
  • Serve with 2 cups prepared instant white rice.

Mexican mole sauce, a mixture of chilies, spices, fruit and unsweetened chocolate, is often served with chicken or pork. The chocolate adds depth to the flavour of the recipe. This simplified version has lots of flavour, just like the original, but with just a fraction of the ingredients.
