  • Bring chicken broth and quinoa to boil in saucepan on high heat; cover. Simmer on medium-low heat 20 min or until quinoa is tender and broth is absorbed. Remove from heat; let stand 5 min.
  • Spoon quinoa into large bowl; fluff with fork. Cool completely.
  • Add remaining ingredients; mix lightly.

Make Ahead

The quinoa can be cooked ahead of time. Cool, then refrigerate up to 24 hours before mixing with the remaining ingredients as directed.

Substitute

Prepare using any other colour of quinoa, such as white or black.
