  • Heat oven to 400ºF.
  • Cut squash lengthwise in half; remove and discard seeds. Brush cut sides of squash halves evenly with half the dressing. Place squash halves, cut sides down, in shallow baking dish. Bake 20 min. or just until slightly tender.
  • Meanwhile, bring water to boil in medium saucepan. Stir in quinoa; cover. Simmer on medium-low heat 8 min. or until tender, Remove from heat. Fluff with fork.
  • Heat oil in large nonstick skillet on medium heat. Add yellow onions; cook 4 min. or until crisp-tender, stirring frequently. Add peas and garlic, cook and stir 3 min. or until peas are thawed and garlic is fragrant. Remove from heat. Add quinoa, bacon, cranberries, cheese, pepper and remaining dressing; mix lightly.
  • Turn squash halves cut sides up in baking dish; fill with quinoa mixture.
  • Bake 30 min. or until squash is tender and quinoa filling is heated through. Sprinkle with green onions.
  • Cut in half to serve.

Make Ahead

Both the squash and quinoa can be cooked ahead of time. Cool, then refrigerate up to 2 days before using as directed.

Special Extra

Garnish with additional chopped green onions and freshly cracked black pepper before serving.
