  • Place potatoes and cauliflower in large saucepan. Add enough water to completely cover vegetables. Bring to boil on medium-high heat. Reduce heat to medium-low; simmer 20 min. or until vegetables are tender.
  • Drain and return vegetables to saucepan. Add dressing; mash until light and fluffy. Garnish with chopped fresh parsley just before serving.


For best results, cut potatoes and cauliflower into equal-sized pieces to ensure even cooking.

    What can I say, AWESOME!! Great alternative to milk and butter....and healthier for it too!!! Kids even liked it and they really regular mashed I was kinda afraid to try it, although they all like their veggies they don't like things new or mixed together. I might just add cauliflower every time to mashed just for texture and taste, I'm making it again with pork roast and gravy, should be good again!!!
