  • Heat 1/4 cup dressing in large nonstick skillet on medium heat. Add onions; cook and stir 5 min. or until tender.
  • Add eggplant and zucchini; cook and stir 8 min. or until softened. Add peppers, tomatoes and garlic; cook and stir 2 min. Spoon into food processor container.
  • Add chickpeas, cheese and remaining dressing; process until almost smooth. Spoon into bowl; top with olives.

Serving Suggestion

Serve with toasted pita bread, cut into 1/2-inch-wide strips.

Special Extra

Add 1/4 cup tahini to cooked vegetable mixture in food processor container along with the chickpeas, cheese and remaining dressing.

Sprinkle with 1/8 tsp. paprika before topping with the olives.
