  • Reserve 4 shrimp for later use. Chop remaining shrimp. Mix dressing and lemon juice until blended. Add half the dressing mixture to chopped shrimp; mix lightly. Roll cheese into 4 balls. Refrigerate reserved shrimp, shrimp mixture, cheese balls and remaining dressing mixture (separately) 1 hour.
  • Toss avocados with remaining dressing mixture just before serving; spoon into 4 large martini glasses. Top with peppers, shrimp mixture and radicchio.
  • Thread cheese balls and reserved whole shrimp onto 4 small decorative skewers. Place on tops of filled glasses.


Prepare salads on 4 salad plates instead of in the martini glasses.

Make Ahead

Refrigerate whole shrimp, chopped shrimp mixture, cheese balls and remaining dressing mixture for up to 4 hours before using to fill and top martini glasses as directed.
