  • Heat oven to 425ºF.
  • Combine pears, nuts, 1/4 cup each parsley and dressing, and 1/4 tsp. cumin. Refrigerate until ready to serve.
  • Mix remaining parsley, dressing, cumin and garlic. Place meat in roasting pan or shallow baking dish; brush with dressing mixture.
  • Bake 10 min. Reduce oven temperature to 325ºF. Bake 1 hour 40 min. or until meat is done (160ºF). Let stand 10 min. before slicing. Serve with the pear salsa.
