  • Heat oven to 275°F.
  • Chop enough of the rosemary sprigs to measure 1 Tbsp. Reserve remaining sprigs for later use. Mix chopped rosemary with Worcestershire sauce, oil, garlic and pepper until blended.
  • Place meat in shallow pan sprayed with cooking spray; brush with Worcestershire sauce mixture. Surround meat with reserved rosemary sprigs.
  • Bake 1-1/4 hours to 1-1/2 hours or until meat registers 135°F for medium-rare doneness (or 145°F for medium doneness) when meat thermometer is inserted into thickest part of meat.
  • Remove meat from oven; cover loosely with foil. Let stand 15 min. before slicing to serve. (Temperature of meat will continue to rise 5°F to 10°F as it stands.)

Serving Suggestion

Serve with hot mashed potatoes and your favourite roasted cut-up fresh vegetables.

Special Extra

For more flavour, sprinkle roast with 1/2 tsp. coarse salt before serving.
