I made this for the 1st course of sunday brunch for my bookclub and it was a HUGE hit! I used regular feta though and the flavours were still awesome. I've been asked for the recipt and I plan to make this again soon.
Wow! This was so delicious...I will definitely make it again. It really had a gourmet taste to it. I didn't and wouldn't change a thing about the recipe!
I have made this recipe twice and my family loves it! As mentioned by another reviewer, you definatly have to roast the beets and carrots to get the carmelized flavour.
