  • Heat oven to 375°F.
  • Melt butter in large saucepan on medium heat. Add broccoli; cook 2 min., stirring frequently. Stir in flour until blended; cook 2 min. or until hot and bubbly, stirring constantly. Gradually stir in dressing, then milk. Bring to boil on medium heat, stirring constantly; cook and stir 2 min. or until thickened. Remove from heat; stir in cheese.
  • Beat egg whites in medium bowl with mixer on high speed until stiff peaks form; set aside.
  • Beat egg yolks in large bowl with mixer until thick and lemon coloured. Stir in broccoli mixture. Gently stir in egg whites just until blended.
  • Pour into 1.5-L soufflé dish.
  • Bake 25 to 30 min. or until top is golden brown and knife inserted near centre comes out clean. Serve immediately.

Serving Suggestion

Serve with a mixed green salad drizzled with your favourite Renée's Vinaigrette.

How to Blanch the Broccoli

Add broccoli to saucepan of boiling water; cook 2 min. Drain, then immediately add broccoli to bowl of ice water to stop the cooking process.
