The recipe says to chop the onions but they charred easily (because they were smaller pieces) so I would say just quarter the onions or even just cut them into wedges.
One hour was too long to roast (in my oven anyways) so next time I will do more like 45 minutes and even stir them up a bit half way so they don't stick/burn. I roasted two heads of garlic instead of one - because we love garlic at our house!
Made it twice now, AMAZING soup! so easy!
it was great :) altough i modified it quite a bit. i added white potatoes and butternut squash. Bit of cinammon and nutmeg, salt and pepper and table cream.
