  • Heat oven to 400°F.
  • Toss potatoes, onions and garlic with oil; spread onto foil-covered rimmed baking sheet. Bake 1 hour or until vegetables are tender; spoon into large saucepan.
  • Stir in broth. Bring to boil on medium-high heat. Remove from heat; cool slightly. Add to blender, in batches, with cream cheese product; blend until smooth. Return to saucepan.
  • Cook on medium heat 5 min. or until heated through, stirring occasionally. Serve topped with chives.

    Easy and delish!! The recipe says to chop the onions but they charred easily (because they were smaller pieces) so I would say just quarter the onions or even just cut them into wedges. One hour was too long to roast (in my oven anyways) so next time I will do more like 45 minutes and even stir them up a bit half way so they don't stick/burn. I roasted two heads of garlic instead of one - because we love garlic at our house!

    it was great :) altough i modified it quite a bit. i added white potatoes and butternut squash. Bit of cinammon and nutmeg, salt and pepper and table cream.
