Rinse 1 can (19 fl oz/540 mL) chickpeas or black beans. Add to cooked rice mixture along with the parsley and raisins. Or, add 2 cups chopped cooked chicken, fish or seafood to the cooked rice mixture instead. Increase the final cooking time if necessary until all ingredients are heated through.
Omit saffron. Substitute chopped fresh basil for the parsley, and chopped sun-dried tomatoes for the raisins.
