Cook brown rice in tomato juice and saffron to fill it with flavour, then add golden raisins for a hint of sweetness. Feeling fancy? Garnish with a sprig of fresh herbs for an extra special touch.

  • Heat oil in large saucepan on medium heat. Add red peppers, onions and garlic; stir. Cook 5 min. or until vegetables are crisp-tender, stirring occasionally.
  • Add rice; cook and stir 1 min. Add tomato juice, black pepper and saffron; mix well. Bring to boil; cover. Simmer on medium-low heat 40 min.
  • Stir in parsley and raisins; cook, covered, 3 to 5 min. or until rice is tender and most the liquid is absorbed. Fluff with fork.

Special Extra

Rinse 1 can (19 fl oz/540 mL) chickpeas or black beans. Add to cooked rice mixture along with the parsley and raisins. Or, add 2 cups chopped cooked chicken, fish or seafood to the cooked rice mixture instead. Increase the final cooking time if necessary until all ingredients are heated through.


Omit saffron. Substitute chopped fresh basil for the parsley, and chopped sun-dried tomatoes for the raisins.
