  • Spread half the bread onto bottom of 13x9-inch baking dish sprayed with cooking spray. Cover with layers of half each of the spinach, peppers, salmon and shredded cheese. Repeat layers.
  • Beat next 5 ingredients with whisk until well blended; pour over ingredients in baking dish. Cover with foil. Refrigerate 4 hours.
  • Heat oven to 375ºF. Bake strata, covered, 1 hour or until centre is set and top is lightly browned, uncovering after 30 min. Sprinkle with Parmesan. Let stand 10 min. before cutting to serve.

    Good meal to prepare in advance. I would make the cubed bread smaller next time. My daughter that does not like fish loved it.
