  • Combine first 5 ingredients.
  • Toss chicken with dressing. Mix cream cheese and salsa until blended; spread onto tortillas. Top with lettuce, tomatoes, chicken mixture and half the pineapple mixture; roll up, tucking in both sides of each tortilla as it is rolled. Secure with toothpicks; cut in half.
  • Serve with remaining pineapple mixture.

Serving Suggestion

The pineapple salsa can be also be served as a dip for tortilla chips, or spooned over hot baked or grilled fish.


Substitute another pepper, such as a serrano chile, for the jalapeño pepper.

Make Ahead

The flavorful pineapple salsa can be prepared ahead of time. Store in tightly covered container in refrigerator up to 2 days before using as directed.


To save time, purchase peeled and cored fresh pineapple, found in the produce section of most larger supermarkets, to make the pineapple salsa. And to shorten the prep time even more, use a purchased rotisserie chicken for the shredded cooked chicken.
