  • Place potatoes in microwaveable dish; cover. Microwave on HIGH 15 min. or until tender.
  • Meanwhile, heat oil in large nonstick skillet on medium-high heat. Add chicken and onions; cook 10 min. or until chicken is done (170°F), turning chicken and stirring onions after 5 min.
  • Add potatoes and remaining ingredients; stir. Cover; simmer on medium-low heat 5 min. or until heated through.


This is a great way to use leftover cooked potatoes. Just cube enough of the potatoes to measure 2-1/2 cups. Omit the potato microwaving step. Cook chicken and onions in hot oil, then continue as directed.

    Made this last night and had it today for lunch. Just wish I had more leftover for supper. I used large red potatoes which I cubed and microwaved. Omitted onions,added only one cup of peas,upped the broth to 3/4 cup, and added a T of Buffalo hot wing sauce. Oh yeah!! Can't wait to make this baby again!
