This is a great way to use leftover cooked potatoes. Just cube enough of the potatoes to measure 2-1/2 cups. Omit the potato microwaving step. Cook chicken and onions in hot oil, then continue as directed.

Easy and quick meal to make. My family enjoyed it.
Very easy and tasty recipe!!! Good flavors my whole family loved.
Made this last night and had it today for lunch. Just wish I had more leftover for supper. I used large red potatoes which I cubed and microwaved. Omitted onions, added only one cup of peas, upped the broth to 3/4 cup, and added a T of Buffalo hot wing sauce. Oh yeah!! Can't wait to make this baby again!
