  • Heat oil in large skillet on medium-high heat. Add eggplant, potatoes and peppers; cook 10 to 12 min. or just until potatoes are tender, stirring frequently and adding garlic for the last minute.
  • Add pasta sauce; mix well. Cover; simmer on medium-low heat 15 min. or until heated through, stirring occasionally.
  • Stir in parsley.
