  • Heat greased barbecue to medium heat.
  • Prick potatoes in several places with fork or sharp knife. Grill 1 hour or until tender, turning occasionally.
  • Meanwhile, process basil, garlic, lemon juice, oil, sugar, Worcestershire sauce and cayenne pepper in food processor until smooth. Place shrimp, scallops and halibut in large bowl. Add half the basil mixture; mix lightly. Refrigerate until ready to use.
  • Remove potatoes from barbecue; cool slightly. Meanwhile, transfer seafood mixture to grill basket. Grill 5 to 7 min. or until shrimp turn pink, scallops are opaque and halibut flakes easily with fork, occasionally shaking grill basket to turn seafood and halibut.
  • Use sharp knife to cut "X" into top of each potato; scoop out centres into medium bowl, leaving 1/8-inch-thick shells. Add ricotta, Parmesan and black pepper to potato flesh; mash until smooth. Spoon into potato shells. Top with seafood mixture.


Substitute tilapia for the halibut.
