  • Prick potatoes in several places with fork or sharp knife. Microwave on HIGH 6 min. or until tender, turning and rearranging potatoes after 3 min. Cool 5 min. Cut potatoes into 3/4-inch cubes.
  • Heat oil in large nonstick skillet on medium heat. Add yellow onions, peppers and bacon; cook 5 min., stirring occasionally. Add potatoes; cook 8 to 10 min. or until lightly browned, stirring occasionally. Stir in beans; cook 3 min., stirring frequently.
  • Use back of spoon to make 6 indentations in top of bean mixture; slip cracked egg into each indentation. Cover; cook 10 to 15 min. or until egg whites are set and yolks are cooked to desired doneness. Sprinkle with green onions.

Special Extra

Serve topped with Heinz Chili Sauce and/or a light sprinkling of Cracker Barrel Shredded Double Cheddar Cheese.

Serving Suggestion

Serve with whole wheat toast and a cold glass of fruit juice.
