  • Cook spaghetti in large saucepan as directed on package, omitting salt and adding snow peas to the boiling water for the last 30 sec.
  • Drain spaghetti mixture, reserving 1/4 cup cooking water. Mix peanut butter, dressing and soy sauce. Gradually stir in reserved water.
  • Place spaghetti in large bowl. Add peanut butter mixture; toss to coat. Stir in vegetables; top with nuts.


Look for packages of matchlike carrot sticks in the produce section of most larger supermarkets. If you are unable to find them, you can use 1 cup shredded carrots instead.

Special Extra

Sprinkle with 2 Tbsp. chopped fresh cilantro before serving.

    Yummy! Love the combination of a peanut flavored sauce mixed with vegetables. I will make this again!

    Have made this recipe, with some alterations and additions, and it's always a big hit! We omit the snow peas, grate the carrots, and sprinkle toasted sesame seeds on top instead of the peanuts, which tend to go mushy if you don't eat up the whole bowl of noodles at your meal or event.
