  • CUT each tenderloin lengthwise (not all the way through) and open out flat. Pound slightly to flatten.
  • SAUTÉ onion in butter until softened. Stir in apple, apricots and 2 tbsp (30 mL) of the coating mix. Spread stuffing along centre of one tenderloin. Top with remaining tenderloin. Tie with string to secure.
  • SPRINKLE remaining coating mix evenly over meat.
  • BAKE at 400°F (200°C) for 45 minutes. Slice and serve.
