  • Heat oven to 350°F.
  • Prepare cake batter as directed on package; stir in carrots, pineapple and 3/4 cup nuts. Pour into 2 (8-inch) square pans sprayed with cooking spray.
  • Bake 25 to 30 min. or until toothpick inserted in centres comes out clean. Cool cakes in pans 10 min. Invert onto wire racks; gently remove pans. Cool cakes completely.
  • Beat cream cheese in large bowl with mixer until creamy. Gradually add sugar, mixing well after each addition. Whisk in Cool Whip.
  • Stack cake layers on plate, filling and frosting with cream cheese mixture. Garnish with remaining nuts.

Dessert can be part of a balanced diet but remember to keep tabs on portions.

Substitute

Substitute yellow cake mix plus 2 tsp. ground cinnamon for the spice cake mix.

Use a toothpick to draw 4 diagonal lines across top of cake; sprinkle remaining 1/4 cup nuts over lines.
