  • Place onions, carrots and celery in slow cooker; top with chicken.
  • Mix next 4 ingredients and pineapple juice until blended; pour over chicken. Cover with lid. Cook on LOW 7 to 8 hours (or on HIGH 3-1/2 to 4 hours.), adding pineapple chunks and peppers to slow cooker for the last 30 min.
  • Serve over rice.

Special Extra

Garnish with sliced green onions and chopped fresh cilantro just before serving.
