Like all meats, this flavourful pork roast needs to be cooked until done (160ºF). To test for doneness, insert instant-read thermometer into thickest part of roast any time after the suggested 3-1/2-hour cooking time. If necessary, continue to cook roast additional 30 min. or until done. For best results, follow the directions to cook this roast on the LOW setting to prevent the meat or sauce from burning.
Substitute 1 undrained can (14 fl oz/398 mL) pineapple tidbits in juice for the cranberry sauce.
